Vegan French Toast

If you love cozy weekend breakfasts and comforting brunch recipes, this Vegan French Toast deserves a spot on your table. It’s lightly sweet, warmly spiced, perfectly golden on the outside, and soft on the inside — without being soggy or eggy. Best of all, it’s completely plant-based and made with simple pantry ingredients.

Vegan French Toast Recipe

As a kid, I actually hated French toast.

Traditional French toast is usually made with eggs and dairy milk, and for me it always tasted too egg-forward and turned out soggy instead of golden. That texture just wasn’t it. So over time, I started experimenting with a vegan version that felt lighter, more balanced, and actually allowed the warm spices and syrup to shine.

This version uses Just Egg and soy milk as the base, with a touch of flour to help the batter lightly coat the bread and crisp up beautifully in the pan. Cinnamon and nutmeg add warmth, while brown sugar gives just enough sweetness to make this feel indulgent — without being overwhelming.

The result? A French toast that’s:

  • Moist but not soggy

  • Crisp on the edges

  • Soft and fluffy in the center

  • Perfect for soaking up maple syrup, fruit, or whatever toppings you love

Why This Vegan French Toast Works

Instead of relying on eggs for structure, this recipe uses a combination of:

  • Just Egg for binding

  • Soy milk for creaminess

  • Flour for light structure and crispness

That combo gives the toast enough body to hold together while cooking, without creating that heavy, custardy texture that can feel too dense.

Cinnamon and nutmeg bring warmth and depth, making this feel like a true brunch-worthy recipe — not just “vegan French toast,” but really good French toast that just happens to be vegan.

This Vegan French Toast Is:

  • Soft yet lightly crisp

  • Warmly spiced with cinnamon and nutmeg

  • Lightly sweet (not overly sugary)

  • Simple and quick to make

  • Cozy, comforting, and brunch-ready

  • Naturally dairy-free and egg-free

…and always a crowd favorite.
