Make this easy Chicken Chana Masala with shredded chicken, canned chickpeas, and warm spices. A comforting, high-protein weeknight dinner.

Ingredients

  • 2 tablespoons avocado oil
  • ½ medium yellow onion, diced
  • 1 tablespoon ground cumin
  • ¾ teaspoon pink sea salt
  • 2 tablespoons garlic purée
  • 3 tablespoons ginger purée
  • ½ cup fresh cilantro, finely chopped
  • 1 red Fresno chili, finely minced
  • 1 tablespoon ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon ground turmeric
  • ½ teaspoon black pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15.5-ounce) can chickpeas
  • About ⅓ cup reserved chickpea cooking liquid
  • 0.38 lb cooked shredded chicken
  • 1 teaspoon garam masala
  • Juice of 1 lemon
For Serving:
  • Warm naan
  • Basmati rice (I love the Trader Joe's microwaveable basmati rice for convenience.)

Instructions

  1. Drain and rinse the canned chickpeas. Place them in a saucepan and cover with water by about an inch. Add a pinch of salt and black pepper, then simmer for 15–20 minutes until the chickpeas become softer and creamier. Reserve about ⅓ cup of the cooking liquid before draining.
  2. Heat the avocado oil in a large Dutch oven or deep skillet over medium heat.
  3. Add the diced onion, cumin, and sea salt. Cook for 8–10 minutes, stirring occasionally, until the onions become soft and lightly golden.
  4. Finely chop the cilantro and Fresno chili together. Using a mortar and pestle (or the side of a knife), mash them into a coarse paste. Stir in the garlic and ginger purées.
  5. Add the herb mixture to the onions and cook for about one minute until fragrant.
  6. Stir in the coriander, chili powder, turmeric, and black pepper.
  7. Add the crushed tomatoes, shredded chicken, softened chickpeas, and reserved chickpea cooking liquid. Stir until everything is well combined.
  8. Cover partially and simmer over medium heat for 25–30 minutes, stirring occasionally, until the sauce thickens.
  9. Finish by stirring in the garam masala and fresh lemon juice.
  10. Taste and adjust seasoning as desired.
